For some reason my stash of this year’s homemade elderflower cordial is dwindling quicker than I thought it would. It’s been going down really nicely, maybe because hubby took a liking to it as well.
But there are so many things I wanted to use it in… I thought I better act quickly.
We haven’t had lemon curd for absolute ages, mainly as we didn’t consume eggs for a while and I never tried vegan version.
Organic, local eggs are occasionally back on the menu now and I thought I would try making my good old lemon curd recipe but with addition of elderflower cordial.

Depending on your personal preferences, you can make it either on a tangy side or embrace flavour of elderflower and go sweet and floral. There is also option of somewhere in between!

Curd is such a simple preserve to make and it’s a shame that so many people find it a bit intimidating. Apparently, the fear of scrambled eggy mess is real .
Well, fear not. As long as you’re invested in curd making and it’s got your full attention for all of 15 minutes, you really can’t go wrong.
